Rustic Olive Oil Pasta

Pasta may not have the same amount of added sugar as breads and other types of starches butthey still can boost your blood sugar in a hurry with added carbohydrates.

12 oz gluten free pasta, cooked to package instructions

1 lb sliced mushrooms

5 cups baby spinach, chopped

2 scallions, thinly sliced

1/2 bunch parsley, minced

juice of 1 large lemon

1/4 cup broth

1 can white kidney beans, drained or ground turkey

1/2 cup grated parmesan

1/3 cup extra virgin olive oil

Sea Salt & Black Pepper to Taste

Starting this recipe with gluten free pasta cuts down on the blood sugar spike! Prep your pasta then set aside. Place a pot over medium heat and when hot add the mushrooms, cooking for 7minutes or until juices have been released. Stir in the spinach, scallions, parsley, lemon juice and broth and simmer for 1 minute. Then stir in the beans or cooked ground turkey and cooked pasta and heat all the way through then remove from heat. Stir in the cheese, olive oil, salt, and pepper then serve! This is another recipe that’s easy to make ahead of time so you have something delicious packed for a grab-and-go lunch!
